Carbons within food nutrients (carbohydrates, protein, lipids) are stable because they are bonded (held) to hydrogen (by electrons). Much of the book is a bit over my head but I must say that I’ve read (listened to) dozens of books like this one and never understood free radicals until now. Certainly worth the merger purchase price.
